My first thought when seeing this was... "uhhh. tomatoes? and spinach???". How weird can we get? Maybe I should just got straight to the top (or bottom?) and suggest mushrooms.  Then I see:

Okay, you guys win. Actually I may have to try the thinly sliced onions. I used to love adding crisp bacon strips to my grilled cheese. 

I assume you are talking about raw mushrooms and not sauteed ones. How do you keep them from causing big lumps in the sandwich? I guess with care you can slice them real thin, an eighth of an inch thick or so.

I usually use just whatever cheese I have. Unlike Phlip, I don't remember ever having trouble with cheddar cheese separating. I've always used butter, sometimes on the outside as well as the inside of the sandwich. Perhaps I'll try some of the other suggested spreads here. But probably not vegamite.
