[Sca-cooks] Quiche/tarts (Sayyeda al-Kaslaania)

Honestly, I don't use any milk or cream in my quiches. I know, heresy!

For a modern-day quiche, I found this Epicurious recipe to be a winner (and I actually leave out the cottage cheese and add two more eggs).

The Ember Day Tart is a good period alternative, though. There's also the spinach and chard tart from Le Menagier:
