Ohhh! Okay, so the color of the olives comes more from how ripe they are allowed to become on the tree, rather than different types of processing. 

One of my books on olives might also have told me that, if I'd ever gotten around to reading them. I guess that chance to spend more time reading might be one advantage of forced retirement/disability. At the same time, I'm having trouble seeing that as being a useful life. I keep feeling guilty right now when I spend several hours reading,rather than putting the time into my job search.
