Given what I've seen in the capitularies and inventories, and also in
some of the archeological finds (remnants in pottery, etc), the
Carolinginas were eating a fair amount of beans, and beans and grains
were a significant portion of their diet. I'm not sure why we don't see
a whole lot of pulses in later cookbooks. It might have something to do
with climate changes and subsequent agricultural practice.
