[Sca-cooks] Kale with bacon

I am finishing up editing Ban-fili (mistress) Cailte Caitchairn's "Lawyers, Legends and Lanfills: Early Irish Food" article for the Florilegium and in her suggested menu, she mentions, in the second course "Kale with bacon".

I have been trying to add more kale to my diet, as I've heard it is fairly nutritious, at least compared to most lettuce and such in salads. I've found it only so-so there.

What kind of dish would this be? A salad? Can someone give me a possible recipe for this "Kale and bacon"? Is it like a spinach salad with a hot bacon and something else?dressing, which I think I've had? Or something totally different?

Since I'd like to find a way to eat more kale, and it already tends to go bad before I can use it all up in salads, can anyone recommend some other recipes with kale, either period or modern?

I know this is still "silly season" but that is almost over, and I'm afraid I'll forget about this if I wait until next week. :-)

I also found some information on why pigs have never really been a milking animal, but I will save that for next week. We did have a thread on this a while back.
