Greetings!  All things "swan" are in Ivan Day's new blog 
(http://foodhistorjottings.blogspot.com/) - pies, butter, ice cream, 
roast, plus two diagrams of swan bill markings!  Ivan has many photos, 
including a swan pie that he made and a "swimming swan" of butter that 
moves when pulled by a magnet hidden in a piece of bread! (No, that 
wasn't period, but it would be intriguing!)
