Yay, a recipe for my favorite sauerkraut!! This stuff is really, really
good.
Sauerkraut, Estonian Style
from the Russian Cookbook by Barbara Norman
1 lg can sauerkraut (1 lb. 11 oz)
2 cups beef broth or stock
1 tbsp butter
1 tbsp sugar
Drain sauerkraut, squeezing with the hands until quite dry. Do not rinse.
Place sauerkraut in a saucepan, adding enough beef stock to cover. Put lid
on saucepan and simmer two hours. Add butter and sugar, stir, and simmer
for another hour. Diced meat/smoked ham is often added to make it a
heartier dish.
