That sounds very cool.  I met him at the Food Historians meeting at IACP in
San Francisco last month, he was talking about this among other projects.  
Thanks for posting the full run-down of the course, it is good to see how
other people present food history in class format.

to get this to listen to on our next road trip!


(I've purchased several history, nutrition, and other courses on CD from

fascinating. They can be pricey, but fortunately some libraries lend them.)
