I think it's always important to be very clear about which 'medieval' we're 
 talking about. Especially when the dish in question may have Arab origins. 
The  Enseignemenz recipes is early 14th century; this is already early 
16th, that is,  almost Renaissance. The first of course would have been much 
closer in time to  any theoretical Arab source.
