I prefer the version without cheese -- comes out like a big stuffing pie (yummy!)

Of course, that doesn't answer the question...

What kinds of cheese do you all prefer in your ember day tart?  I've used cream cheese and ricotta before, but I have some Port Salut in the fridge and am wondering how that would do.
