Oh, one more substitution in "Sweet Delights" - they use pumpkin or occasionally another winter squash - most of which are yellow or orange, and all of which are New World - to replace gourds - which are generally pale green, but hard to find.

While the flavor of winter squashes lends itself well to sweets, it is far far from the taste of young gourd. While young gourds can be difficult to find - although some, such as luffa, are available in Chinese and South Asian markets - a closer substitute might be pattypan/scallop squash, which is a light green summer squash, or little yellow crookneck squashes, although they are not quite the right color. I would only use zucchinis if they are young and small; i am not particularly a fan of zucchini. Yeah, yeah, they're New World squashes, but they are closer in taste and texture to a young gourd than a hard yellow-orange winter squash.
