I don't know if I have anything on German or even more specifically, period German winter feasts, but here is where I've tried to collect various references to and examples of period feasts:

And here are some German feasts cooked in the SCA, although I'm not sure whether the last two are winter feasts or not. The last is from Rumpold, but you might recognize the head cook.
