An on-going interest of mine is all the medieval food that tends to get
overlooked because it wasn't in cookbooks; notably the food of the poorer
classes. There actually is information out there if one cares to look, but it's
 widely scattered.

That makes this paper (freely available to those on Academia.edu)
particularly interesting. It reviews both the food and the salaries of some workers
in Basel in the fifteenth century:

La main-d’oeuvre et son alimentation à la fin du moyen-âge d’après les
documents comptables. L’exemple de la région de Bâle, in: E. Rassart-Eeckhout
u. a. (Hg.), La vie matérielle au Moyen Âge. L’apport des sources
littéraires, normatives et de la pratique, Louvain-la-Neuve 1997, 179–203
