Having discovered, thanks to Guillaume,  the

Assises de Jérusalem; ou, Recueil des ouvrages de jurisprudence  composés

I have of  course dug into it a bit further.

Unfortunately, there's only a little on  food. Aside from the list of 
spices, etc. cited previously, there's another  similar list soon after it which, 
among other things, may include the first  French mention of tahini:


"38. De la tahine, si coumande la raison  qu'on en dée prendre, de 
dreiture, ar dreit, le disme '.
39. Don fromage c'on  aporte des kasaus [villages] des Sarasins, et il se 
vent à la fonde, si coumande  la raison c'en en dée prendre, de droiture, le  
dyhme."
