It seems to me that there are a number of sauces that can be considered condiments. Not all sauces are condiments, not all condiments are sauces.

I think the following word origins is useful in the consideration:

sauce: 1300–50; Middle English  < Middle French  < Late Latin salsa,  noun use of feminine of Latin salsus  salted,past participle of sallere  to salt, derivative of sāl salt


condiment: c.1420, from M.Fr. condiment, from L. condimentum "spice," from condire "to preserve, pickle, season,"var. of condere "to put away, store," from com- "together" + dere "to put."
