When i was cooking in denmark one woman i had the pleasure of working with several times had told me that jeruselem artichocks went back to thd middle ages and folks generally used those as ' like ' potatos. They are still widely used instead of potatos.
I have often wondered about celeric root being used in period instead of celery stock.
