[Sca-cooks] Heresy?

I don’t know how well venison would “do” as a chopped/ground meat. It’s very lean, on its own. When we ended up with bambi burger when I was growing up, it always had to be a blend with another meat (probably beef). I don’t see any extra fat in the dishes, so that should probably be taken into account.
