[Sca-cooks] Essential Knives?

Something I find just as important as the blade is the handle. I prefer one
of the Henckels lines because I have fairly large hands, but my wife
prefers our Cutco set. Make sure you get one that is well fitted to the
user. As far as which knives to use, while I have a fairly large variety of
blades, I tend to use the aptly named chef's knife for almost everything.
