Many thanks for all your input. From the beginning I thought about doing something to do with chicken broth. For no better Spanish option, I have decided to do Nola’s SALSA LISA PARA VOLATERIA DE OLLA, which Brighid translates as SMOOTH SAUCE FOR FOWLS IN THE POT. I like it a it includes orange or lemon juice, something only common to southern Europe at that time. I think it will turn out well at least the ingredients are lovely.
