The Medieval Spanish Chef blog does not slow down in August or any other month of the year. As the blogs are in alphabetical order in Spanish, this week, morcilla meaning blood sausage was in the spotlight featuring the former King Juan Carlos I’s favorite supper: Morcillera, blood pudding with caramelized onions and fried eggs; Morciellas, blood sausage with honey served as a tapa; and a "black and white" sandwich consisting of a blood sausage with a chorizo or white sausage to make all mouths water! Although traditional winter dishes, blood pudding is now available year round.
