While that's actually true in another trial, it's not the case here. The  
only monetary amounts come at the start, in purchasing the grain (for sols 
and  deniers) and after Milhaud's signature, when the relative costs for 
loaves at  each price for wheat are listed. In between all the references are to  
amounts.
 
Bear in mind that the whole purpose of this trial is to see how much bread  
can be produced from a given quantity of wheat. So how the bread made is 
very  important (and in fact in the 18th century Malouin showed how varying 
certain  elements could "fake" the test).
