Without working my way all the way through a translation of this complex  
text, this note after the baking might be of interest:
 
"And of the said bread baked 352 pounds, 9 ounces
And the flour  weighing 334 lb 6 ounces
Remains 18 lb 3 ounces for the water"

It  includes a list of costs at the end. Note that one item that is NOT 
mentioned  here is salt.
