At the least, I would think, salt, mustard and vinegar. Pepper for the more 
 well-off (it was immensely expensive for a very long time; salt only 
became  expensive in France when the kings began to tax it in the fourteenth  
century.
 
In earlier medieval times, garum as well, but that ended soon after  
Charlemagne.
