Malt sugar is very old and still used in the Chinese sugar animals.

Sugar cane is apparently from the Tang period. I have a volume called Sugar and Society in China which covers the history of sugar in China. 
Harvard put it out some years ago. Not a volume one is likely to buy these days. Bit pricey.
