My apologies for not changing the special characters in the candied citron peel recipe which was also used for Seville oranges and for lemons. Most of the ? are quote marks or apostrophes and at least one m-dash. However, the name of the recipe needs clarification

First word: A - g breve - a - c-cedilla
Last word: last letter is an undotted i

A breve looks sort of like a sideways parenthesis, curve down.

It is sometimes transliterated as gh, especially in Arabic words. In this case, it is modern Turkish

A dotless i has a very short i sound.
