Thank you, I had kind of thought of going this route (simple, yet tasty
modern items), purely for the (probable) instant gratification it would
provide.

The hearth is gorgeous and we are going to order one
as well.

Okay. At the risk of having the wrath of the group
decend on me, I suggest you go really easy with stuff at
first.

Marinate some steaks, get some brats, make a stew.
Why am I suggesting such boring and mundane items?
Because you are inexperienced with the hearth and
open fire cooking. It's hard to ruin these items so
you can figure out temperature control and fire
management of a very forgiving dish.

Make some stuff you are used to, I'm sure you have
used a barbecue grill so right now, treat the hearth
as a big grill.

You might want to spit a chicken and play with
your groovy new spits but be sure to keep an eye
on it and your meat thermometer handy. Or, if
you can find a rope of sausages, wrap a length of
sausages around the spit and tie it on with twine.

Right now, go easy and have fun with it. Learn
the quirks of your system on forgiving foods. After
that you can step a little further out of the comfort
zone.

Good luck and have fun!
