[Spit-Project] baking a cake in a dutchoven

Countess Regina has baked several successful cakes
in her dutch oven so she might have some insight.

A couple of suggestions for baking in a dutch oven:

Be sure to rotate the lid a few times when baking to
even out the heat. The same for the whole oven. 
Keep an eye on the coals. They will cool down and
need to be replaced. 
Be sure to have some coals in the center, both
top and bottom.

If I am using wood instead of charcoal I will often
coat the lid with an even layer of hot ash/coals but
still rotate to ensure even heating.

Constantly check the status of the food to insure
things are baking evenly.
