It's not just Mexican restaurants, really.  It's a matter of business sense.
People Want to eat out Friday, Saturday, and Sunday (after church - BIG
dinner rush).  Monday is pretty much Dead in most eateries, so some choose
that day to close and give all a rest (or, as my Aunt's establishment did,
do a serious cleaning without patrons grumping about the smells and mops in
evidence).
