Much of the Cathars' philosophy and doctrine was Manichaean, which was
dualistic in nature. In other words, if it was of the flesh or of earthly
nature, it could not be holy or good (including the sacrament of bread and
wine from the Christian communion). Therefore, the "Prefecti" or"Electi",
which were the teachers and holy men and women, abstained from eating flesh.
Marriage and sex, even for procreation, was also condemned.

Over time, the Manichaeans morphed into the Paulicians and Bogomils, whom
the Byzantine Emperors worked hard to eliminate. Even Anna Comnena wrote
about them at the end of the 11th century. The belief system went
underground until it showed up among the Cathars in southern France and
Spain the the 11th century. The Cathars also had a pure elite - the perfecti
or boni homines (or bonhommes), who accepted the discipline of austere
living, stict dietary rules and permanent celibacy. "Early Christian

I first heard stories about the Albiginsians from Master Connor MacCennadie
(sp?) from Bryn Gwlad who was in mundane life a Mormon missionary in
Carcassone, France

That's cool about the Albiginsians.  I didn't know they were vegetarians.  I
studied them a bit in my French history class.  We had a section on the
Cathars.  Then, John and I actually got to visit that area of France in 1998
when we went to Carcassonne.  They had the Spanish Inquisition Torture
museum there at Carcassonne, so there were lots of stories about the people
of Albi.  Wasn't Albi the subject of the famous Papal phrase, "Kill them
all. God will sort them out."?  So sad and a bit "cathartic."

There *were* vegetarians in period.

There were "heretical", dualist christian sects who chose to forsake meat
and sex, among other things. The Albiginsians and the Bogomils were two of
them.

Physicians would often prescribe vegetarian diets for gout sufferers.

There are other examples, of course:)

Ughhh. That really lends credibility to the SCA motto, "We live not as it
was, but as it should have been." (or something like that). I think I would
have become a vegetarian really quick. It wouldn't surprise me to find out
that the herbalists back then stuck to eating plantlife and leaving meats
alone.
