Don Ceallach is teaching a "Making Rapier Armor" class at King's 
College this weekend. That might be a good place to start.

I strongly prefer the mask-drape (either leather or fabric) and a 
high collar on the doublet instead of a hood. That way, as soon as 
you take off your mask, your whole head is exposed to the balmy 
Ansteorran breezes, rather than still being enclosed in a hood.
