They still are.  I am the 'token Gentile' (secretary) of a local
Chassidic synagogue/Jewish Education/Outreach Center.  It is quite
common for them to quote 'Rebbe Somebody-Or-Other' who wrote in the 10th
or 13th century, just like they were quoting from something someone
wrote last year.  There are *huge mountains* of period resource
documents of all types available, from what I read, all easily available
and readable in the original Hebrew and very often translated into
English for study by American Jews who didn't go to Hebrew School but
want to learn.  Someday when I have a better grasp on basic herbalism,
I'm going to research herbal knowledge of period Jewish physicians. 
That much material is almost enough to make me wish for a Jewish
personna!
