If you are allergic to the sulfites in the wine, I guess you could say its a genetic thing yes.  Cooking would inactivate those chemicals ie cause them to become something other than sulfites.  Lots and Lots of people have difficulties with wine and other things which contain
these.  Many wine lables now contian the warning that they have sulfites in them.  Your symptoms sure sound like a sulfite allergy.
