Hello! There is a type of 'cooler' - a wet inverted clay pot in a clay
saucer - which uses evaporative cooling to keep the contents cold. Does
anyone know when this was invented? (There is a reference in Athenaeus to
slaves wetting down large jars of water overnight to produce chilled clear
water - can't find it at the moment...)
Also, how common was it to keep food cold by immersing it in a running
stream, as was done in colonial America?
