I had a girlfriend with very bad arthritis, who got some knives from 
Sweden. They have a sort of reverse pistol grip (i.e. it looks like a 
capital L turned on its 'back') and they are extremely comfortable and 
easy to use. Apparently they were just designed as ergonomic knives, 
which they seem to be.
