The recent slaughter of 100 of the sexually mature hogs for sides of lard is
certainly a goodly number. It is ironic that that number of hogs slaughtered
equaled the number of immature pigs counted although it may be a coincidence.
It would be nice to find period inventory that covers a 3 or 4 yr. span.

Given that other parts of the slaughtered hogs were most likely used for other
purposes, the significance is that the sides were mentioned in the inventory
but the other parts of the animal were not. This indicates to me that the
sides were of primary importance. For instance, there is no mention of hams or
any other preserved/smoked swine products in the inventory. I find this
significant.
