Yup, that works pretty well, I especially like the powdered buttermilk.
Here's my recipe for camp corn bread:

You'll need a large cast iron frying pan with a lid

1 Tablespoon Oil or bacon drippings
2 cups self-rising corn meal
4 Tablespoons (60 ml.) powdered buttermilk
4 Tablespoons (60 ml.) powdered eggs
1/3 cup oil or bacon drippings
Water

Heat 1 Tbs. oil in pan while mixing batter.  Mix dry ingredients well, then
stir in remaining oil and enough water to make a thick but pourable batter.
Stir just enough to get all ingredients wet.  Pour into pan and place over
coals and cover with lid and more coals.  Allow to bake undisturbed for 45
minutes.

I used to go on weekend camping/fishing trips a lot.  The only food we would
take would be the above ingredients for corn bread, salt, and bacon.  I'd
usually mix all the dry ingredients before hand.  We'd fry fresh fish for
every meal salted and dredged in the cornmeal mixture.  Wonderful stuff.

I've never been to the Broad River of South Carolina fishing without catching
more than enough fish to eat and to share.  That is one thing I do miss about
Back East.  I have not been fishing in the seven years I have been here.
