I picked the recipes that exactly [or as near as i could get] to the
list of dishes in the first course of the 14th century wedding meal [for
lesser nobles] as the idea is to as closely as possible recreate the
meal as I could get, which might actually be god, that way nobody could
claim we were making it up...

Or you could use the person's redactions who is designated as the chief
'chef.' This would be far more 'fun' and reasonable than throwing out
the
same old recipes that have been used for eons. The usual method of
cooking on
a food show is to do your own thing not someone else's.

Seems to me a reasonable supposition that anyone involved in the project

would be both knowledgeable in period cookery and a good cook so
resorting to
redoing other people's work would not be part of the equation.
