What you are describing here is called Almond DoFu, and is a gelatin made
with an Agar Agar base.  (Gelating derived from seaweed.)  Dim Sum
restaurants serve it in chunks with chilled fruit salad over it.  I like
to make the mix at home and buy the 'fancy' canned fruit mixes, like the
tropical fruit salads and such.  Yum, yum, yum.  It is also available in
flavors, coconut being the only other one that comes to mind right off. 
You do actually add milk to the mix, and I suppose the almond milk would
only enhance the flavor (not that it needs much help).  If you were
making it from scratch, almond mild with an agar-agar gelatin base would
come pretty close.
