I read about it in a book at work (a Natural Foods Store) called "Cooking
with Sea Vegetables".  There is a whole chapter on Irish Moss in it, and
it goes into some detail on it.  When next at work, I will read it again
and see if it gives any history at all.

(Waverly Root says that "carrageen is also known as Irish Moss, which is
not a moss but a seaweed".  Not much help, but it's there.)
