I made the squid dish again last night.  Fried the rings on medium-low 
for 5-6 minutes, and they were just right.  The sauce, unfortunately, was 
not.  Since it was cooked for a much briefer period this time, the raisins 
didn't have a chance to offset the vinegar, and it was too sour.  Back to 
the drawing-- errr, chopping board.
