The following recipe came from Jeff Smith's The Frugal Gourmet Celebrates=20
Christmas.  I know its not period, but it's a very good plum pudding.  I've=20
made it for several events, often by request.

Margherita the Weaver

Plum Pudding

=C2=BD cup butter, room temperature     =20
6 eggs, room temperature
1 =C2=BD cups pitted prunes, chopped
1 cup pecans, chopped
1 =C2=BD cups fine bread crumbs
1 teaspoon ground nutmeg
1 cup sugar
=C2=BD cup chopped citron
=C2=BD cup dark raisins
=C2=BD cup flour
1 teaspoon ground cinnamon
=C2=BD teaspoon ground all spice

Note:  a 12 oz package of pitted prunes equals 1 =C2=BDcups.

Cream the butter and sugar together.  Beat the eggs in one at a time. =20
Combine the citron, prunes, raisons and pecans in another bowl.  Add the=20
flour to the fruit and nuts and toss together so that every thing is coated=20
with flour (hands work best for this.)  Add to the butter and egg mixture=20
along with the remaining ingredients.  Blend for 1 minute so that all is=20
incorporated.

Grease and flour a souffl=C3=A9 dish, about 7X4 inches.  Add the heavy batte=
r and=20
bake ina preheated 350F oven for 50 to 55 minutes or until nicely browned. =20
Serve warm by spooning out or cool and cut into pieces.  Garnish with whippe=
d=20
cream or hard sauce.

Hard Sauce
=20
=C2=BD cup unsalted butter, softened
3 tablespoons rum or brandy
=C2=BD cup confectioner=E2=80=99s sugar
=20
cream butter and sugar together until fluffy.  Beat in the rum or brandy, 1=20
tablespoon at a time.
