You do _not_ need an apprenticeship in the SCA to get recognition. There
are quite a few Peers out there who never went that route.
And cooking apprentices work the same way most others do: you hook up
with a Peer, and start in on doing <whatever>. Some associates have no
knowledge of the Peer's field; some have a fair amount; some will never
learn anything of the Peer's field.
