Check the Florilegium; I believe there's some material on this subject.
The shoirt answer is that yes, there do appear to have been some
documentable cases and recipes for herbed cheeses; in a couple of cases
the cheeses is actually curdled with pulverized fresh herbs (I think
Columella mentions sage, among other plant substitutes for rennet),
which might also contribute to the flavor and color of the finished cheese.
