the Metropolitan Museum of Art put out a book that i found real interesting:
_Victorian Ices and Ice Creams: 117 delicious and unusual recipes
upddated for the modern kitchen:original recipes from The Book of Ices by
A. B. Marshall, London, 1885_.  It has what appears to be facsimile of the
original and modern format redactions of the ingedients.  I have only been
restrained from diving into wholesale dessert recreation by the threats of
my physician about what will happen to my joints and my blood pressure if
i don't get some of this extra weight off.  <sigh>

The full title of the original book:
_The Book of Ices. Including cream and water ices, sorbets, mousses, iced
souffles, and various iced dishes with names in French and English, and
various coloured designs for Ices.  by A.B.Marshall

Sounds like fun, no?
