[Sca-cooks] Wings!

When the weather cooperated, I used to
make chicken wings for the holiday party.
I started with 10-12 pounds wings. Cut them
into pieces and threw the wing tips into a
bag for making broth later. The two larger
halves then got sprinkled with a dry spice
mix.... and stuck in the fridge over night.
Next day they were smoked for several hours...
usually on the semi-protected front porch due
to the snow and wind... After they were done
then they were brought in and put in roasting
pans... then lastly they were sauced....and
stuck back in the fridge overnight. The
next day they were heated in the sauce and then taken
to the party.  They usually lasted about
15 minutes ... sometime they were gone in ten...
