Nah, nah.  It's "Liadnan sez!" when you do it.  If you can do the job, why
put up with the whining wannabes who haven't had the courage to put it on
the line and do a feast.  The people who have been there are usually easier
to work with the the ones who haven't.

When I do a feast, I want creative control because I'm viewing the feast as
a performance as much as a meal.  I often try to find someone who can
organize the entertainment to my specifications and let them do the job,
unless the entertainment is going to be esoteric.

The meal itself is usually created from recipes evoking a particular time
and place and the presentation of the colors, flavors and textures is
critical to the gustatory pleasure.  By the time I present a feast, I've
normally tested the recipes a number of times, have some idea of how
acceptable they will be to the average feaster, and have a vision of how
everything is to meld together.  To let someone without knowledge of what I
am doing dictate to me is foolish, since it is almost guaranteed to fail.

And speaking of feast as performance, I finally got to see the trailers for
Vatel.  I've got to see this show just to steal ideas.
