Sounds like a rather more do able version of "let's do a Ren Faire".  I
would suggest that a way to get one's toes in with out being badly bitten
would be to work a deal to do a regularly scheduled  "Medieval/Ren Night" at
a local restaurant with an adventurous clientele.  Then you would just need
to explain to the customers that it's all about food not flash.
