I don't know if it's period, either, but it is a wonderful method for
imparting flavor to a thick piece of meat.  My paternal grandmother was a
terrible cook... bland food, limited repertoire.  My mother got her to eat
eye of round which had been infused with garlic (which Mama Jane swore she
hated) in such a manner.  Mama Jane declared it the best beef she had ever
tasted.  'Nuff said.

While cooking the Ph.D buffet for a friend (Master
Robin of Gilwell) a couple of weeks ago I was
thinking of fun stuff to do with 10 lbs of pork loin.
Inspiration suddenly hit me and I drilled holes in
the loin and filled them with some pesto I had in
the 'fridge.

The end result was wonderful. The loin was moist and
had the pesto flavor all through the meat. It's most
likely not period but for non-period meals I highly
recommend it.
