You forgot to mention that the bread (and often the beer) is made from tef,
an indigenious grass, Erogrostis tef.  It is also known as teff, tahf
(Arabic), and lovegrass.

If anyone wants to play with tef, it is available, usually through a health
food store or a dealer in specialty flours (Bob's Red Mill, for example).
