Actually, Panera/St. Louis Bread Co. does make a semolina sourdough. It comes
out as a slightly yellow, somewhat soft dough. It also is a little spongier
than a traditional sour. Really good stuff. It gets made the same way as a
reg. sour, just use *finely* ground semolina flour instead of wheat flour.
